I just recently started my own catering company and needed to find a truck that would basically be like a kitchen on wheels. I was unable to find anything that would work.. Then a friend of mine told me that Uhaul sold out their used box trucks and realized that would be perfect to convert into a kitchen/ catering truck. It took a little work but we were able to get it working and now it has made my business so much easier and now I am able to work larger parties and at a more upscale way. So just thought I would share my story incase someone else might be looking to do what I did. I love that i made the purchase!!

Matt,

Thanks for reaching out regarding the availability of wood and wood chips. Unfortunately, we would have no need for the chips or logs as our smokers all use 'food grade' 100% wood pellets which use high pressure to bind them. Our choice of pellets was carefully considered and is based primarily on consistent temperatures and smoke mixes...somewhere else on this Blog is a bit more on that. Regardless, it sounds like your occupation gives you access to wood that other BBQ folks in the area would most certainly have use for! Our bretheren use all types of wood to smoke their stuff...nearly any kind of wood other than pine or cedar (evergreen) can be used for smoking; Hickory, Cherry, Maple, Oak, Mesquite, etc!

Regarding your questions about age and cost, again we are at a bit of a disadvantage due to our choice of wood fuel, but aged wood certainly burns a bit better, albeit hotter than its greener cousin. Pellets are, as you might imagine, a much more expensive fuel source as they are specifically made for smokers and not heating which requires a much better product and process. I would invite any readers of the Blog to share thier insights with Matt and provide any assistance that you can. I would also suggest a quick Google search for both other suppliers and possible users in the area. There are a number of BBQ caterers and 'shacks' in Central PA and I am certain that quite a few are using solid wood!

Thanks for the questions Matt...sorry if the answers aren't exactly what you were looking for, but I hope they helped!

Gentlemen,
I recently gave a friend several pounds of cherry wood chips. He later told me how happy he was with the product, and suggested I contact BBQ smokers to see if there might be a market for truly fresh cut wood. I am a landscaper by trade and come in contact with cherry, hickory, apple and oak wood on a regular basis. I am not a BBQ smoker so I have several questions for you.
1. Do you have a need or desire for these types of wood?
2. Does the age of wood or wood chips make a difference in your end product?
3. What are you paying for your wood now and would it be worth more to have it custom cut and delivered to your location?
I am very much looking for your feedback so we might be able to understand what each other needs
best which would make a better product to relish or sell.
Regards,
Matt
